Keto – PB&J Muffins

Ingredients:

  • 1 cup natural peanut butter
  • 1 egg
  • 1/2 cup milk of choice
  • 2 T granulated Monk Fruit sweetener
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • Pinch sea salt
  • 1/3 cup blueberries

Preparation:

  1. Preheat oven to 350°F.
  2. In medium bowl, add PB, egg, milk, sweetener, and vanilla. Stir until thick and smooth, then stir in the baking soda and salt. Fold in blueberries.
  3. Divide into 8 silicone muffin cups. Bake 14-15 minutes.

Banana Bread

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup oil
  • 2 eggs, beaten
  • 3 bananas, mashed
  • 2 T sour milk (add some vinegar, sour cream, or plain yogurt)
  • chopped walnuts

Preparation: Mix dry ingredients in separate bowl and add to wet ingredients.

Bake in greased bread pan at 350 degrees for 1 hour.

Soft Pretzels

Ingredients:

  • 1 1/4 cups water
  • 3 1/2 cups bread flour
  • 1 tsp salt
  • 1 egg yolk (keep the white for glaze)
  • 1 T oil
  • 1 tsp lemon juice
  • 2 T sugar
  • 1/8 tsp white pepper
  • 1 T active dry yeast
Glaze:
  • 1 egg white
  • 1 T water
Optional toppings:
  • Kosher salt
  • Sesame seeds

Preparation: Place ingredients in bread maker in order listed. Run the “dough” cycle.

Remove dough from bread maker. Punch down on a lightly-floured surface. Cut the dough into 16 equal pieces. Roll each piece of dough into a rope about 16″ long. Shape each rope into a pretzel. (cross the ends of the rope to make a loop; twist the crossed ends again and fold across the loop)

Place the pretzels on a greased baking sheet 1 1/2″ apart. Brush with glaze (combined egg white and water). Sprinkle with salt or sesame seeds.

Bake at 375 degrees for 15-20 minutes or until golden brown.

Makes: 16 pretzels

Cheddar Bay Biscuits

Ingredients, batter:

  • 2 1/2 cups Bisquick baking mix
  • 4 Tbsp cold butter (1/2 stick)
  • 1 heaping cup grated cheddar cheese
  • 3/4 cup cold whole milk
  • 1/4 tsp garlic powder

Ingredients, topping:

  • 2 Tbsp butter, melted
  • 1/2 tsp garlic powder
  • 1/4 tsp dried parsley flakes
  • pinch of salt (optional)

Preparation: Combine Bisquick with butter in a medium bowl using a pastry cutter or a large fork until the chunks of butter are about the size of peas. Add cheddar cheese, milk, and garlic powder. Mix by hand until combined, but don’t over mix.

Drop approximately 1/4-cup portions of the batter onto an ungreased cookie sheet using an ice cream scoop. (Use parchment paper if you don’t like dark bottoms on the biscuits.)

Bake for 15 to 17 minutes at 400 degrees, or until the tops of the biscuits begin to turn light brown.

While baking, prepare topping by stirring all ingredients together. Use a brush to spread this garlic butter over the tops of all the biscuits. Use up all of the butter. (Some people brush the topping on the biscuits three minutes before they are done baking, and return the biscuits to the oven.)

Yield: 12 biscuits

Banana Streusel French Toast

Ingredients:

  • 1 loaf unsliced Italian bread, cubed
  • 1 1/3 cup mashed bananas
  • 12 oz can evaporated milk
  • 5 eggs
  • 1 Tbsp milk
  • 1 tsp cinnamon
  • 1/4 tsp. almond extract

Streusel Topping:

  • 2 cups brown sugar
  • 1 cup oatmeal
  • 1 cup Grape Nuts
  • 1 stick butter or margarine
  • 1/4 cup molasses

Preparation: Place bread cubes in a greased 9×13 pan. In a bowl, mix together all other ingredients. Pour evenly over bread. Mix all streusel topping ingredients and sprinkle it over the top of the bread mixture. Cover and refrigerate overnight.

Bake at 350 degrees for 40-45 minutes. Let stand 10 minutes before serving.

Serve with maple syrup and whipped cream.

Grandma Bieri’s Corn Bread

Ingredients:

  • 2 cups stone-ground cornmeal
  • 1/2 cup wheat germ
  • 1 Tbsp brown sugar
  • 1 Tbsp oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups buttermilk
  • 1 egg
  • pinch of salt

Preparation: Preheat oven to 425 degrees. Stir dry ingredients together well. Mix egg, milk, oil; add to dry ingredients. Stir only until mixed (the less stirring, the lighter the bread).

Pour batter into greased loaf pan.

Grandma always used a cast-iron skillet. To do this, pre-heat the skillet on stove burner until hot. Spray with cooking spray and pour in batter.

Bake 20-25 minutes or until done. Remove from oven and turn out of pan.
