Ingredients:
- 1 large can crushed pineapple
- 12-15 marshmallows or 1 1/2 cup miniature marshmallows
- 1 package lime Jello
- 1 cup cottage cheese
- 1/2 cup chopped nuts
- 1 cup whipped cream
Preparation: Drain pineapple and add water to make 1 1/2 cups juice. Put in saucepan and boil for 1 minute. Add marshmallows and melt. Add lime Jello and dissolve. Let cool until thickened. Add crushed pineapple, cottage cheese, nuts and whipped cream and stir.
I found this note on this recipe on another website and thought it could be of use: “I used a 6oz pack of jello, so I had to use more liquid. I used ALL pineapple juice. 4 cups total. I didn’t melt the marshmallows because it makes the jello too tough. Instead, fold the mini marshmallows in with all the ingredients after jello has set. One last thing… I whipped 1/2 of the jello with cool whip and left the other 1/2 plain. It makes for a pretty salad.”
